Eating healthy is important to overall health at any age. You want to eat what’s best for your body so that you can stay active and do the things you want to do.

You’ve heard it for as long as you can remember – eat your fruits and veggies. We constantly hear that foods are good for us, then years later hear that they are now somehow bad for you. But with fruits and veggies, that’s rarely the case.

Why are vegetables so good for you? The list of reasons can be pretty lengthy, but it all boils down to the fact that they are rich in nutrients and low in calories and fat. Plus, they have no cholesterol. There’s no arguing with those kinds of statistics on your side! Fruits are healthy for many of the same reasons.

At The Esquiline, with our own in-house chef, the healthy-eating options are plentiful. So what are some of our residents’ favorites? We’re glad you asked! We are excited to share one of the top requested recipes with you today!

Cold Strawberry Soup is one of the most requested dishes in the summer. Find out how to make it on your own with the recipe shared below!

Cold Strawberry Soup (6-8 servings)

Water.....................................................1 pint plus 1 cup

Sugar......................................................½ cup

Fresh Strawberries................................1 pint

Salt.........................................................Pinch

Cinnamon..............................................Pinch

Corn starch............................................1 Tbl.

Water.....................................................½ cup

Lemon Juice...........................................1 Tbl.

Plain Yogurt............................................1 cup

Sour Cream.............................................¼ cup

Vanilla.....................................................1 tsp.

  1. Puree fresh strawberries with water, add salt, cinnamon and sugar.
  2. Place in small sauce pan and simmer for 6-8 minutes.
  3. Combine cornstarch and ½ cup water, whisk into soup and bring back to the simmer.
  4. Allow soup to cool to room temperature, add lemon juice and vanilla.
  5. Whisk in sour cream and yogurt and chill completely.
